Err Urban Rustic Thai (Bib Gourmand)
Chef Bo Songvisava and Dylan Jones are two of the pioneering chefs who preserve Thai cuisine seriously. Raan Jay Fai (One Michelin star)
Jay Fai, a chef is considered as a legend living in Bangkok or also known as the queen of street food. Everyday, Jay Fai, a 70-year-old female chef with a hat and ski goggles, is still working on making famous Thai street food. In her eatery, diners still liken Jay Fai as a conductor who controls pans on a glowing charcoal stove in a smooth and skillful manner.
Despite being a street food eatery in Bangkok, but Jay Fai’s price is sometimes 10 times more expensive than other restaurants. However, diners still lined up very crowded to enjoy the dishes she cooked with the freshest ingredients that selected best. Perhaps, Thailand’s nightlife and street food, Bangkok residents probably are no strange to Jay Fai’s shop.

For the past three years, people have come to Gaysorn shopping center to enjoy the unique dishes prepared by the couple chefs Sat Satongun and Jason Bailey. Each of Paste’s dishes clearly see the chef’s love and good intention through charming taste and creative and elegant decoration way. Therefore, Paste does not need to advertise widely but still attracts extreme crowds of diners to enjoy the cuisine every day.
Chef Satongun has won the Michelin star thanks to his unique recipes and fresh ingredients. Come to Paste, you have to try dishes such as lobster salad, fermented fish, fried fish skin and especially pink flower coral.
Satongun championed classic recipes and quality ingredients, and sought authentic tastes from under-rated places like Nan province in the north. An example: lobster salad, originally a modest oriental dish of fermented fish, add a twist with fried fish skin and pink edible coral flowers.
